Stuffed Chipotles

Chipotles stuffed with aged cheese and battered; these chiles are delicious, and you can also use this same recipe to fill them to your liking.

  • 10 chipotle chiles
  • 250 grams añejo cheese
  • oil
  • 2 eggs
  • 250 grams panela cheese
  • 2 cloves garlic
  • 1 onion
  • aromatic herbs, (bay leaf, oregano, and thyme) to taste
  • water

  • Boil the water with the panela, onion, garlic, and aromatic herbs.
  • While boiling, carefully devein the chiles so as not to break them; make a cut on one side with scissors or a knife. Once deveined, rinse them carefully to remove any dirt.
  • Add the filling ingredients.
  • Beat the eggs and dip the chiles in the egg, then quickly place them in the pan.
