Eggplants Neapolitan Style

  • 3 eggplants
  • 250 grams Mozzarella cheese, grated

  • 2 cups tomato sauce
  • 1 red bell pepper

  • Sauté the onion in olive oil.
  • Add the tomato sauce and let cook for a few minutes.
  • Add salt, pepper, and oregano to taste.
  • Cook on low heat for 10 more minutes.

  • Add a little salt.
  • Heat a little oil in a pan and fry both sides of each slice of eggplant.
  • Add a tablespoon of Neapolitan sauce on top of each slice of eggplant and a bit of cheese.
  • Heat in a pan until the cheese melts. Serve.
