Eggplants Neapolitan Style

3 eggplants
250 grams Mozzarella cheese, grated
1 onion, finely chopped
2 cups tomato sauce
1 red bell pepper
salt and pepper
oregano
Preparation

Low
Sauté the onion in olive oil.
Add the tomato sauce and let cook for a few minutes.
Add salt, pepper, and oregano to taste.
Cook on low heat for 10 more minutes.
Slice the eggplants to a thickness of one centimeter.
Add a little salt.
Heat a little oil in a pan and fry both sides of each slice of eggplant.
Add a tablespoon of Neapolitan sauce on top of each slice of eggplant and a bit of cheese.
Heat in a pan until the cheese melts. Serve.
