Sautéed Eggplants with Onion

Delicious side dish of sautéed eggplants with onions, you can enjoy them and accompany your favorite dishes, plus they are very easy to prepare.

  • 2 tablespoons oil
  • 1 eggplant, medium, cut into cubes unpeeled
  • 1/2 cups white onion , slice
  • 1/2 cups red onion, slice
  • 1 clove garlic, finely chopped
  • salt , and pepper to taste
  • 2 teaspoons parsley , chopped
  • 1/2 cups tomato purée
  • basil, to taste

  • Heat the oil in a pan and add the eggplant with the onions; cook everything for about five minutes; stir very well.
  • Add the garlic, season with salt and pepper, sprinkle with basil and add the parsley while stirring.
  • Drizzle with tomato juice and cook for three minutes on low heat.
