1 eggplant, medium, cut into cubes unpeeled
1/2 cups white onion , slice
1/2 cups red onion, slice
1 clove garlic, finely chopped
salt , and pepper to taste
2 teaspoons parsley , chopped
1/2 cups tomato purée
basil, to taste

Heat the oil in a pan and add the eggplant with the onions; cook everything for about five minutes; stir very well.
Add the garlic, season with salt and pepper, sprinkle with basil and add the parsley while stirring.
Drizzle with tomato juice and cook for three minutes on low heat.
