Huitlacoche Quesadilla

Try this huitlacoche quesadilla recipe; it's super easy to make and has a delicious flavor.

  • 6 corn tortillas
  • 4 cups huitlacoche, fresh or canned
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetable oil
  • salt, to taste

  • Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
  • Add half of the onion and the garlic and sauté for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pour into a deep plate.
  • Fill the tortillas with huitlacoche and a bit of cheese. Cook the quesadillas either on a griddle (if you want them oil-free) or in oil if you prefer them fried.
