Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and the garlic and sauté for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pour into a deep plate.
Fill the tortillas with huitlacoche and a bit of cheese. Cook the quesadillas either on a griddle (if you want them oil-free) or in oil if you prefer them fried.
