Mushroom, Black Olive, and Serrano Ham Carpaccio

  • 1/4 cups olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon yellow lemon juice
  • 1 shallot, sliced
  • 1 serrano chile, without veins or seeds, in julienne
  • few salt
  • black pepper powder
  • 1/2 cups baby arugula, washed and disinfected
  • 60 grams serrano ham
  • 1 cup pitted black olives
  • 200 grams button mushroom, crimini
  • Parmesan cheese, sliced

  • Mix in a bowl the oil, vinegar, lemon juice, shallot, serrano chili, salt, and pepper; set aside.
  • Place a bit of arugula in the center of a flat plate and arrange rolls of serrano ham on top.
  • Cut the olives and mushrooms into very thin slices.
  • Arrange them around the plate.
  • Drizzle with the vinaigrette and finish with parmesan slices to taste.
