1/4 cups olive oil
1 tablespoon red wine vinegar
1 tablespoon yellow lemon juice
1 shallot, sliced
1 serrano chile, without veins or seeds, in julienne
few salt
black pepper powder
1/2 cups baby arugula, washed and disinfected
60 grams serrano ham
1 cup pitted black olives
200 grams button mushroom, crimini
Parmesan cheese, sliced

Mix in a bowl the oil, vinegar, lemon juice, shallot, serrano chili, salt, and pepper; set aside.
Place a bit of arugula in the center of a flat plate and arrange rolls of serrano ham on top.
Cut the olives and mushrooms into very thin slices.
Arrange them around the plate.
Drizzle with the vinaigrette and finish with parmesan slices to taste.
