Delicious quick and easy side dish. Perfect to accompany a main course or to place inside a sandwich. It also works great as a filling for canapés or snacks.

1 1/2 cups button mushrooms, sliced
1 cup sour cream
1 cup tomato purée
2 tablespoons butter
2 tablespoons flour
1/2 onions, finely chopped
chipotle chiles in adobo sauce, to taste

In a skillet, heat the butter and sauté the onion until it becomes transparent.
Add the flour until it takes on a golden color.
Incorporate the mushrooms, tomato puree, and chipotle. Cover and let cook over medium heat for 15 minutes.
Add the cream, mix well. Adjust the seasoning with salt and pepper. Let it come to a boil and remove from heat.
