Stuffed Portobellos with Gratinated French Lettuce

These stuffed portobellos with French lettuce are very creamy and rich, as the filling has a touch of parmesan cheese dressing that makes it irresistible. Don’t save them for tomorrow!

  • 4 portobello mushrooms
  • 1 tablespoon olive oil, for brushing
  • 2 pinches salt, for brushing
  • 2 pinches pepper, for brushing
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/8 red onions, in feather
  • 1 clove garlic, finely chopped
  • 2 packages lettuce, mini French Eva ®
  • 1/4 cups toasted peanuts
  • 1 cup dressing, Eva ® parmesan
  • 1 cup Gouda cheese, grated
  • 1 tablespoon lettuce, mini French Eva ® for decorating

  • Preheat the oven to 180°C.
  • Brush the portobellos with olive oil, salt, and pepper.
  • In a skillet over medium heat, heat the oil and butter. Cook the red onion until transparent and add the garlic, cook for one minute.
  • Add the mini French lettuce Eva® and cook for 5 minutes. Mix with the peanuts and Eva® parmesan dressing and season with salt if necessary.
  • Fill the portobellos and top with cheese. Bake for 20 minutes or until the portobellos are tender and the cheese is melted. Decorate with chopped lettuce leaves and serve immediately.
