These stuffed portobellos with French lettuce are very creamy and rich, as the filling has a touch of parmesan cheese dressing that makes it irresistible. Don’t save them for tomorrow!

Preheat the oven to 180°C.
Brush the portobellos with olive oil, salt, and pepper.
In a skillet over medium heat, heat the oil and butter. Cook the red onion until transparent and add the garlic, cook for one minute.
Add the mini French lettuce Eva® and cook for 5 minutes. Mix with the peanuts and Eva® parmesan dressing and season with salt if necessary.
Fill the portobellos and top with cheese. Bake for 20 minutes or until the portobellos are tender and the cheese is melted. Decorate with chopped lettuce leaves and serve immediately.
