If you like vegetables, you have to try this delicious zucchini colash; it's very easy to make and economical. The manchego cheese adds a special touch to the dish, making it ideal for the little ones at home.

1 kilo zucchini
4 tomatoes
1 can corn kernel
1/2 onions
2 cloves garlic
1 stick monterey cheese
1 stick unsalted butter
1 pinch salt , and pepper

Slice the onion into rings.
Chop the garlic, zucchini, and tomato.
In a skillet, heat the butter and fry the onion with the garlic.
Add the zucchini until slightly cooked, then add the tomato, corn kernels, and continue to simmer.
Season with salt and pepper to taste, cover with cheese, and let it melt.
