Zucchini Colash

If you like vegetables, you have to try this delicious zucchini colash; it's very easy to make and economical. The manchego cheese adds a special touch to the dish, making it ideal for the little ones at home.

  • 1 kilo zucchini
  • 4 tomatoes
  • 1 can corn kernel
  • 1/2 onions
  • 2 cloves garlic
  • 1 stick monterey cheese
  • 1 stick unsalted butter
  • 1 pinch salt , and pepper

  • Slice the onion into rings.
  • Chop the garlic, zucchini, and tomato.
  • In a skillet, heat the butter and fry the onion with the garlic.
  • Add the zucchini until slightly cooked, then add the tomato, corn kernels, and continue to simmer.
  • Season with salt and pepper to taste, cover with cheese, and let it melt.
