Baked Breaded Zucchini

In this breaded zucchini recipe, we won't be frying them; we'll be baking them to make them healthier. Who said that being on a diet means you can't enjoy breaded dishes?

  • 3 pumpkins, cut into strips or slices
  • breadcrumbs
  • pimentones
  • salt, to taste
  • pepper, to taste
  • 3 tablespoons Parmesan cheese, grated
  • dressing, of your choice

  • In a bowl, mix the Parmesan cheese, breadcrumbs, salt, paprika, and pepper.
  • Place the cut zucchini in a bowl and add the dressing. Don't use too much, just enough to create a layer.
  • Coat the zucchini with the breadcrumb mixture.
  • Arrange on a baking tray lined with parchment paper.
  • Bake at 180ºC for about 10 minutes.
