In this breaded zucchini recipe, we won't be frying them; we'll be baking them to make them healthier. Who said that being on a diet means you can't enjoy breaded dishes?

3 pumpkins, cut into strips or slices
breadcrumbs
pimentones
salt, to taste
pepper, to taste
3 tablespoons Parmesan cheese, grated
dressing, of your choice

In a bowl, mix the Parmesan cheese, breadcrumbs, salt, paprika, and pepper.
Place the cut zucchini in a bowl and add the dressing. Don't use too much, just enough to create a layer.
Coat the zucchini with the breadcrumb mixture.
Arrange on a baking tray lined with parchment paper.
Bake at 180ºC for about 10 minutes.
