1/4 cups onion
1 clove garlic, finely chopped
3 cups zucchini, in cubes
1 cup tomato, in cubes
1/2 cups corn kernels
sour cream, to accompany
queso fresco, to accompany

Heat the oil in a skillet over medium heat and cook the onion until translucent. Add the garlic and zucchini, and cook for about 10 minutes.
Add the tomato and corn kernels and cook for another 10 minutes, until everything is cooked and the zucchini is tender.
Season with salt and cook for 5 more minutes. Serve with cream and cheese.
