Delicious Zucchini Mexican-Style

  • 1/4 cups onion
  • 1 clove garlic, finely chopped
  • 3 cups zucchini, in cubes
  • 1 cup tomato, in cubes
  • 1/2 cups corn kernels
  • sour cream, to accompany
  • queso fresco, to accompany

  • Heat the oil in a skillet over medium heat and cook the onion until translucent. Add the garlic and zucchini, and cook for about 10 minutes.
  • Add the tomato and corn kernels and cook for another 10 minutes, until everything is cooked and the zucchini is tender.
  • Season with salt and cook for 5 more minutes. Serve with cream and cheese.
