Ratatouille with Mushrooms

Ratatouille is a typical French recipe; this time I prepared it with mushrooms. It is ideal for vegetarians as a main dish but you can also serve it as a side.

  • 2 cloves garlic, chopped
  • 1 onion, sliced into half moons
  • 3 tomatoes, peeled and diced
  • 2 zucchinis, sliced
  • 2 red bell peppers, sliced
  • 1 eggplant, sliced
  • aromatic herbs
  • salt , to taste
  • pepper, to taste
  • olive oil
  • 200 button mushrooms, cut into 4

  • Put oil in a pan, then add the eggplant, peppers, zucchini, mushrooms, salt, and pepper.
  • Add garlic, onion, and herbs.
  • Cook until the vegetables are done.
