Ratatouille is a typical French recipe; this time I prepared it with mushrooms. It is ideal for vegetarians as a main dish but you can also serve it as a side.

3 tomatoes, peeled and diced
2 zucchinis, sliced
2 red bell peppers, sliced
1 eggplant, sliced
aromatic herbs
salt , to taste
pepper, to taste
olive oil
200 button mushrooms, cut into 4

Put oil in a pan, then add the eggplant, peppers, zucchini, mushrooms, salt, and pepper.
Add garlic, onion, and herbs.
Cook until the vegetables are done.
