“Spaghetti” from Zucchini with Vegetables

If you love pasta and are watching your carbohydrate intake, this zucchini spaghetti recipe will delight you; you won't notice the difference between zucchini and pasta, and your kids will surely love it.

  • 10 zucchinis
  • 1 broccoli
  • 1 tablespoon salt
  • 4 tablespoons olive oil
  • 1/4 onions
  • 1 clove garlic, finely chopped
  • 2 cups edamame
  • 1/2 cups pine nuts
  • 1 tablespoon basil
  • 2 pinches salt
  • 1 pinch pepper
  • 1/2 cups Parmesan cheese

  • Using a peeler, cut the zucchini into spaghetti shapes. Set aside.
  • In a pot with boiling water and a teaspoon of salt, place the broccoli for 3 minutes or until they change color. Remove and set aside.
  • In a large skillet, heat the olive oil and add the onion, cooking until it is transparent. Add the garlic and cook for one minute, stirring constantly. Add the broccoli and edamame and cook for 5 minutes. Add the cut zucchini and cook a few more minutes until the zucchini is tender.
  • Add the pine nuts and basil, cook for one minute and season. Finish with Parmesan cheese.
