Zucchini Mexican Style

Mexican zucchini can be used to fill a quesadilla or as a side dish for your favorite meal.

  • 4 zucchinis
  • 2 small boxes tomato , cut into cubes
  • 1/2 onions, chopped
  • salt , to taste
  • oil

  • Cut the zucchinis into small cubes. Boil the zucchinis in salted water.
  • In a skillet, add a splash of oil, add the onion, and once it is sautéed, add the zucchini and tomato.
  • At the end, add salt.
