1 kilo zucchini , medium
1 onion, small
3 cloves garlic
4 tomatillos, ripe or a 300g can of diced natural tomatoes
1 can sweet corn
2 tablespoons grated cheese, powder
salt , to taste
extra virgin olive oils

Wash the zucchini well and slice them thinly with a mandoline or a knife, but do not peel them; keep the skin on. Sprinkle with salt and set aside.
In a pot, add a little oil and sauté the finely chopped onion and garlic.
Add the peeled and chopped tomato or the can of tomatoes and let it cook for a bit.
Add the zucchini and let them cook for a few minutes. They should be cooked but al dente.
Add the drained corn and let it cook for 1 more minute. Then add the grated cheese and mix well.
