Zucchini with Tomato and Corn

A tasty, quick, and nutritious side dish. Prepare these delicious zucchini with tomato and corn.

  • 1 kilo zucchini , medium
  • 1 onion, small
  • 3 cloves garlic
  • 4 tomatillos, ripe or a 300g can of diced natural tomatoes
  • 1 can sweet corn
  • 2 tablespoons grated cheese, powder
  • salt , to taste
  • extra virgin olive oils

  • Wash the zucchini well and slice them thinly with a mandoline or a knife, but do not peel them; keep the skin on. Sprinkle with salt and set aside.
  • In a pot, add a little oil and sauté the finely chopped onion and garlic.
  • Add the peeled and chopped tomato or the can of tomatoes and let it cook for a bit.
  • Add the zucchini and let them cook for a few minutes. They should be cooked but al dente.
  • Add the drained corn and let it cook for 1 more minute. Then add the grated cheese and mix well.
