3 cups zucchini , sliced (about 3 medium)
1/2 cups red onion , chopped
1/8 teaspoons red pepper flakes
1 1/2 cups corn, frozen
1 red beefsteak tomato, medium, seedless, diced
1 teaspoon fresh thyme, diced

Heat the oil in a large skillet over medium-high heat.
Add the zucchini, onion, and red pepper flakes.
Cook, stirring occasionally for 4 to 5 minutes or until the vegetables are tender.
Add the corn, tomato, and thyme.
Cook, stirring occasionally for 2 to 3 minutes or until heated through.
Season with salt and pepper if desired.
