Asparagus Soup

Healthy soup made with green asparagus, onion, and chicken broth. No one will believe it doesn't have cream!

  • 1 tablespoon butter
  • 1 onion, chopped onion
  • 1 tablespoon flour
  • 2 cans chicken broth
  • 1/2 kilos asparagus
  • 4 teaspoons sour cream, optional

  • Melt the butter in a medium skillet over medium heat.
  • Add the chopped onion and cook until soft, stirring to prevent sticking, about 8 minutes.
  • Add the flour and stir for about two minutes.
  • Gradually add the chicken broth and wait for it to boil.
  • Add the asparagus pieces (without the tough ends) and lower the heat to medium until the asparagus is tender, about 25 minutes.
  • In a food processor (or blender), add the asparagus (without the liquid) and gradually add 1 cup of the asparagus liquid.
  • Return to the skillet and season with salt and pepper
  • When serving, it can be garnished with a bit of sour cream and pieces of asparagus.
