Asparagus Soup

Healthy soup made with green asparagus, onion, and chicken broth. No one will believe it doesn't have cream!

1 tablespoon butter
1 onion, chopped onion
1 tablespoon flour
2 cans chicken broth
1/2 kilos asparagus
4 teaspoons sour cream, optional

Melt the butter in a medium skillet over medium heat.
Add the chopped onion and cook until soft, stirring to prevent sticking, about 8 minutes.
Add the flour and stir for about two minutes.
Gradually add the chicken broth and wait for it to boil.
Add the asparagus pieces (without the tough ends) and lower the heat to medium until the asparagus is tender, about 25 minutes.
In a food processor (or blender), add the asparagus (without the liquid) and gradually add 1 cup of the asparagus liquid.
Return to the skillet and season with salt and pepper
When serving, it can be garnished with a bit of sour cream and pieces of asparagus.
