Aztec Paella

A delicious recipe to prepare an Aztec-style paella with chorizo, poblano chile, and rice in paella style.

  • 100 grams chicken
  • 80 grams chorizo
  • 3 Poblano chiles
  • 1 onion
  • 3 tomatoes
  • 2 red bell peppers
  • 1 clove garlic
  • 1 teaspoon pepper
  • 1 tablespoon yellow food coloring
  • 500 grams rice
  • 1/2 teaspoons salt

  • Sauté the chicken and chorizo in a large skillet or pot.
  • Toast the poblano chiles on a griddle and peel them.
  • Add the chiles, onion, tomato, bell peppers, garlic, and black pepper to the pot with the chicken and chorizo.
  • Dissolve the coloring in half a cup of hot water and add to the mixture.
  • Once the vegetables and meat are cooked, gradually add the rice into the different spaces.
  • Once all the rice is incorporated, add salt, cover, and let it cook for 10 minutes.
  • Verify that the liquid has been absorbed and the rice is ready.
