Barley, Chicken, and Vegetable Soup

5 cups chicken broth
2 cups chicken, shredded roasted
3/4 cups barley, pre-cooked
2 cups spinach, chopped
1/2 tablespoons salt
1/2 tablespoons pepper
3 cups frozen vegetable, (green beans, corn, carrot, etc.)

In a large pot, combine the chicken broth, chicken, salt, pepper, and vegetables. Cover and cook over medium heat until it boils.
Lower the heat, add the barley, cover the pot, and cook for 10 more minutes.
Remove from heat and add the spinach, mix and let it rest for 5 minutes before serving.
