Barley, Chicken, and Vegetable Soup

A delicious soup that contains fiber, potassium, and magnesium. Serve it with country bread or baguette.

  • 5 cups chicken broth
  • 2 cups chicken, shredded roasted
  • 3/4 cups barley, pre-cooked
  • 2 cups spinach, chopped
  • 1/2 tablespoons salt
  • 1/2 tablespoons pepper
  • 3 cups frozen vegetable, (green beans, corn, carrot, etc.)

  • In a large pot, combine the chicken broth, chicken, salt, pepper, and vegetables. Cover and cook over medium heat until it boils.
  • Lower the heat, add the barley, cover the pot, and cook for 10 more minutes.
  • Remove from heat and add the spinach, mix and let it rest for 5 minutes before serving.
