Bread Crumb Soup

Delicious and easy-to-make Mexican soup, it is a way to make use of bolillos that have hardened a bit, as they are the base of this tasty soup. Make it at home and you will see that everyone will love it and nothing will go to waste.

  • 2 bolillo rolls, hard, diced into small cubes
  • 3 cloves garlic, finely chopped
  • 1 egg
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1 chile
  • 1 sprig epazote

  • Fry the garlic over low heat in oil. Add the chopped bolillo. Let it brown a little. Turn off the heat and add the beef broth preferably hot. Let it cook for 5 minutes.
  • In a cup, crack the egg and beat it. Before turning off the broth, add the egg by passing it through a strainer so that it cooks finely in the broth. Keep stirring the broth so that the egg forms thin strands.
  • Add chili and epazote to taste. Turn off and let it rest.
  • Finally, add pieces of hard bread when serving.
