Broccoli Cream

This creamy soup is excellent with fresh broccoli. Enjoy this soup on a cold day or for a family meal.

3 cups broccoli
2 tablespoons butter
1 onion, finely chopped
3 tablespoons flour
2 cups chicken broth, homemade or canned
1 cup sour cream
pepper

In a large pot, melt the butter over medium heat. Sauté the onion for 10 minutes.
Add the broccoli and continue cooking for 1 minute.
Add flour, salt, and pepper and mix with a wooden spoon. Gradually add the chicken broth and continue cooking until it boils.
Lower the heat, cover the pot, and cook on low for 10 minutes or until the broccoli is well cooked.
In batches, blend the soup in a blender without the center lid so that steam can escape and the blender doesn't explode.
Return the soup to the pot and add the cream. Heat (do not boil) the soup and serve.
