Broccoli Cream

This creamy soup is excellent with fresh broccoli. Enjoy this soup on a cold day or for a family meal.

  • 3 cups broccoli
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 3 tablespoons flour
  • 2 cups chicken broth, homemade or canned
  • 1 cup sour cream
  • pepper
  • salt

  • In a large pot, melt the butter over medium heat. Sauté the onion for 10 minutes.
  • Add the broccoli and continue cooking for 1 minute.
  • Add flour, salt, and pepper and mix with a wooden spoon. Gradually add the chicken broth and continue cooking until it boils.
  • Lower the heat, cover the pot, and cook on low for 10 minutes or until the broccoli is well cooked.
  • In batches, blend the soup in a blender without the center lid so that steam can escape and the blender doesn't explode.
  • Return the soup to the pot and add the cream. Heat (do not boil) the soup and serve.
