One of the secrets of chicken broth is to obtain all the minerals and vitamins from chicken and vegetables thanks to a light boil for a very long period.
All the vegetables are washed and placed in a large pot with the chicken.
They are covered with water and all the other ingredients are added.
Heat over high heat until it starts to boil, then lower the heat and cook over very low heat for 4 hours.
Strain the broth and place it in a dish. It is seasoned with salt. Once cooled it can be stored in the refrigerator or frozen for the rest of the week.
The chicken is removed from the broth and shredded, this can be added to the broth at the time of serving or it can be used for other recipes.
The vegetables are still removed from the broth and can be minced and used for other recipes.
