Traditional Mexican Shrimp Soup

  • 500 grams dried shrimp
  • 2 potatoes, cut into small-sized cubes
  • 2 carrots
  • 4 tomatoes
  • 5 guajillo chiles
  • 1/4 onions
  • 1 1/2 liters water
  • 4 sprigs parsley
  • 3 sprigs epazote
  • 1 clove garlic
  • 15 grams salt
  • 5 grams ground pepper

  • Place water in a pot and bring to a boil.
  • Combine chiles, tomato, garlic, and onion in a blender. Add a bit of water and blend until smooth.
  • Strain and pour into the pot with water. Cook for 10 minutes.
  • Add dried shrimp.
  • Peel potatoes and cut into cubes.
  • Peel carrots and cut into small-sized cubes.
  • Add potatoes and carrots to broth.
  • Add parsley and epazote. Season.
  • Let boil for 5 minutes. Serve traditional Mexican shrimp soup.
