2 onions, chopped
3 tablespoons ginger, chopped
3 tablespoons olive oil
20 carrots
2 tablespoons ground pepper
1 tablespoon nutmeg
6 cups chicken broth, fresh or canned

In a large pot, sauté the onion in olive oil for 4 minutes.
Add the ginger, nutmeg, pepper, and sauté for 1 more minute.
In a food processor, puree the carrots. Add the puree to the onion, ginger, and sauté for 1 minute.
Add the chicken broth and cook for 30 minutes on low heat or until the carrot is very well cooked.
Remove from heat and serve.
