Carrot Ginger Soup

A delicious soup made with carrots, onion, and ginger. This soup is very healthy and ideal for warming up on a cold day. Plus, it won't take you much time to prepare, so you can treat everyone at home.

  • 2 onions, chopped
  • 3 tablespoons ginger, chopped
  • 3 tablespoons olive oil
  • 20 carrots
  • 2 tablespoons ground pepper
  • 1 tablespoon nutmeg
  • 6 cups chicken broth, fresh or canned

  • In a large pot, sauté the onion in olive oil for 4 minutes.
  • Add the ginger, nutmeg, pepper, and sauté for 1 more minute.
  • In a food processor, puree the carrots. Add the puree to the onion, ginger, and sauté for 1 minute.
  • Add the chicken broth and cook for 30 minutes on low heat or until the carrot is very well cooked.
  • Remove from heat and serve.
