Chicken Broth with Spinach and Corn

  • 1 tablespoon vegetable oil
  • 1/4 onions, chopped
  • 2 cups spinach, chopped
  • 3/4 cups corn kernel , (can be natural or precooked)
  • 5 cups chicken broth
  • 1/2 chicken breasts, cooked and shredded
  • salt , to taste

  • In a hot saucepan with oil, sauté the onion.
  • When it starts to look transparent, add the spinach and corn kernels.
  • Cook over medium heat for 2 minutes. Add the chicken broth and cook until it comes to a boil.
  • Add the shredded chicken and adjust the seasoning, it will all depend on your chicken broth.
