Soak the green apple in ice water with lemon juice for 2 minutes. This will prevent your cold soup from oxidizing.
Blanch the spinach with a pinch of salt in a pot of boiling water, then drain and set aside.
Blend the spinach, green apple, almond milk, onion powder, garlic powder, salt, and white pepper.
Garnish the cold spinach soup with apple with toasted sliced almonds and enjoy.
