Cream of Pea, Pumpkin, and Mint

A delicious pea and pumpkin soup with a different touch of mint.

  • 2 cups peas, tender
  • 6 pumpkins
  • 1 bunch peppermint, fresh
  • 2 cups water 2 cups water

  • In a large pot, heat the oil and sauté the chopped onion until it becomes translucent.
  • Add salt, pepper, and mint, and cook for 1 more minute.
  • Add the peas and chopped pumpkin along with the water and boil until the vegetables are well cooked.
  • Place the soup in the blender and blend well.
  • Return the soup to the pot, add the cream, and heat it up.
