Bean Cream with Grandma's Tradition

It is a cream with an ingredient of great tradition in our country the bean. In my family, it has been cherished for several generations. The recipe is simple to prepare, nutritious, economical, delicious, and you and your whole family will surely love it.

  • 1/2 kilos beans, cooked
  • 1/4 onions
  • 1/2 cups evaporated milk
  • 1/4 cups table cream
  • 100 grams bacon, finely chopped
  • 1 avocado, cut into small cubes
  • Cotija cheeses, to taste
  • 1 ancho chile, cut into strips
  • 2 cups chicken broth
  • salt, to taste
  • 2 tablespoons corn oil

  • Put the oil in a pan, and once it's hot, add the bacon until browned, remove it from the pan and set aside.
  • Using the same bacon fat, brown the ancho chili for one minute, remove and set aside.
  • In the blender jar, add the 2 cups of broth, the beans, and the onion. Blend.
  • In the pan where we have the bacon grease, we will add the blender mixture and over medium heat, let it boil, stirring occasionally to prevent sticking. Once it boils, add the cream and condensed milk, lower the heat, and stir until it comes to a boil again.
  • Serve hot. Each plate is topped with bacon, ancho chili, cheese, and/or avocado according to the diner's preference.
