Clam Chowder

  • 3 cans canned clam
  • 2 liters cow's milk
  • 1/4 cups flour
  • 1/4 cups butter
  • 1 shallot, finely chopped
  • 4 teaspoons salt
  • 1 teaspoon pepper
  • 1 baguette
  • 1 bunch fresh thyme
  • 1/3 cups white wine

  • Melt the butter in a deep pan. Sauté the shallot. Separately, using a strainer, drain the brine from the clams and add them to the sauté. Add the white wine and let the alcohol evaporate (for 5 minutes on low heat).
  • Add the flour to the previous preparation, stirring constantly. Once the flour is completely incorporated (and changes color), remove the mixture from the heat.
  • Pour the previous mixture into the blender, add the milk, and blend (ensure that the ingredients are perfectly ground). Return the preparation to the pan and continue cooking over low heat, removing from the heat until it thickens.
  • Cut the baguette into diagonal slices, brush the slices with a little olive oil. Sprinkle with a bit of thyme. Place the slices on a baking tray and bake for 3 minutes at 180° C.
  • Season the cream with pepper and salt. Mix. Pour the cream into bowls and serve with the bread.
