Cold Pea Soup with Yogurt

Accompany your summer meals with a delicious cold pea soup.

  • 1 cup Oikos® greek style yogurt
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 1/2 cups frozen peas
  • 2 1/2 cups chicken broth
  • 1/2 cups almonds, toasted sliced
  • peppermint
  • salt and pepper

  • Heat the oil in a large pot, add the onions and cook them until they are translucent.
  • Add the peas and cook for 2 minutes, then add the broth and let it simmer on low heat for 10 minutes.
  • Blend the soup.
  • Let it cool and add the Oikos Greek Yogurt.
  • Serve cold with toasted almonds and mint leaves.
