1 cup Oikos® greek style yogurt
2 tablespoons olive oil
1 onion, finely chopped
2 1/2 cups frozen peas
2 1/2 cups chicken broth
1/2 cups almonds, toasted sliced
peppermint
salt and pepper
Preparation

Heat the oil in a large pot, add the onions and cook them until they are translucent.
Add the peas and cook for 2 minutes, then add the broth and let it simmer on low heat for 10 minutes.
Blend the soup.
Let it cool and add the Oikos Greek Yogurt.
Serve cold with toasted almonds and mint leaves.
