200 grams butter
1 clove garlic, finely chopped
1 cup onion, finely chopped
1/2 cups wheat flour
1 cup sour cream, or half cream
2 cups chicken broth
2 cups huauzontle, clean
salt and pepper
1 cup croutons, to accompany

Add the butter, onion, and garlic to a pot, then cook for 5 minutes.
Add the flour, mix and integrate very well. Cook until the dough is slightly golden.
Add the cream, the 2 cups of broth, and integrate all the ingredients very well again.
Incorporate the cleaned huauzontles and let boil for 3 minutes.
Take everything to the blender until obtaining a homogeneous mixture, then season to your taste.
Add more broth until obtaining a semi-thick consistency.
Serve the huauzontle cream hot and accompany it with croutons, decorating with cleaned huauzontles.
