Huitlacoche Soup

  • 500 grams huitlacoche
  • 4 cloves garlic
  • 1 onion, finely chopped
  • 75 grams butter
  • 1 tablespoon epazote, chopped
  • 1 1/2 liters chicken bullion
  • 250 milliliters whipping cream
  • walnuts, ground for garnish

  • In a pot over medium heat, melt the butter and sauté the garlic, onion, and huitlacoche for 2-3 minutes.
  • Add the chicken broth and epazote and let the huitlacoche cook over medium heat for about 20 minutes or until the grain releases juice.
  • Remove from heat and stir in the cream.
  • In small batches, blend the soup perfectly and return it to the pot. Season with salt and pepper and heat before serving.
