500 grams huitlacoche
4 cloves garlic
1 onion, finely chopped
75 grams butter
1 tablespoon epazote, chopped
1 1/2 liters chicken bullion
250 milliliters whipping cream
walnuts, ground for garnish

In a pot over medium heat, melt the butter and sauté the garlic, onion, and huitlacoche for 2-3 minutes.
Add the chicken broth and epazote and let the huitlacoche cook over medium heat for about 20 minutes or until the grain releases juice.
Remove from heat and stir in the cream.
In small batches, blend the soup perfectly and return it to the pot. Season with salt and pepper and heat before serving.
