3 yellow onions
1 clove garlic
1 shallot
1 sprig thyme
1 tablespoon unsalted butter
1 tablespoon olive oil
1 tablespoon brown sugar
1 cup cream
1 tablespoon flour
1 teaspoon chicken broth

Slice the onion and chop the thyme.
Place butter, oil, onion slices, thyme, garlic, sliced shallots, and sugar on a baking tray. Bake at 200°C until the onion is golden.
Add one cup of broth to the tray and return to the oven until it comes to a boil. Blend with the remaining broth and cream.
In a separate saucepan, heat butter with flour and pour in the cream. Season and let it boil until it thickens.
