  • 2 cups tomatillo, ground or tomato
  • 1/2 cups onion, chopped
  • 2 cloves garlic
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons canned chipotle pepper
  • 1 cup carrot, peeled and diced small
  • 1 cup peas, pre-cooked
  • 1 cup corn kernel, pre-cooked
  • 1 liter vegetable broth, or chicken
  • queso fresco, for serving

  • Heat the oil in a pot and fry the noodles until they change color and obtain a golden hue.
  • Blend the ground tomato with garlic, onion, and chipotle, grinding until you achieve a homogeneous mixture.
  • Pour the sauce over the noodles and cook for 5 minutes, until the sauce is sautéed and changes color.
  • Incorporate the rest of the pre-cooked vegetables and chicken broth.
  • Cook the noodle soup over medium heat for 8 to 10 minutes or until the noodles are soft.
  • Serve the soup in a deep plate and accompany it with fresh cheese.
