2 cups fideo pasta
2 cups tomatillo, ground or tomato
1/2 cups onion, chopped
2 cloves garlic
1 pinch salt
1 pinch pepper
2 tablespoons canned chipotle pepper
1 cup carrot, peeled and diced small
1 cup peas, pre-cooked
1 cup corn kernel, pre-cooked
1 liter vegetable broth, or chicken
queso fresco, for serving

Heat the oil in a pot and fry the noodles until they change color and obtain a golden hue.
Blend the ground tomato with garlic, onion, and chipotle, grinding until you achieve a homogeneous mixture.
Pour the sauce over the noodles and cook for 5 minutes, until the sauce is sautéed and changes color.
Incorporate the rest of the pre-cooked vegetables and chicken broth.
Cook the noodle soup over medium heat for 8 to 10 minutes or until the noodles are soft.
Serve the soup in a deep plate and accompany it with fresh cheese.
