Fava Bean Soup

  • 1 cup fava beans, dry
  • 4 liters water
  • 2 tablespoons olive oil
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup tomato, finely chopped
  • 2 cups nopal, cut into cubes or strips
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons salt
  • nopal, sliced into strips and cured, for garnish
  • pasilla chile, fried sliced into rings for garnish
  • corn tortillas, fried strips, for garnish
  • tomato, cut into cubes, for garnish

  • Cook the fava beans with water and a bit of salt in a pressure cooker for 30 minutes until soft. Reserve with all the liquid.
  • Heat a small pot over medium heat with oil, fry the onion, garlic, tomatoes, add the fava beans with all the broth, the cactus, cilantro, and season with salt to taste, cover the pot and cook for 25 more minutes, until the fava beans break down and the soup thickens.
  • Serve the soup in soup bowls and garnish with a bit of pickled cactus, fried pasilla chili, tortilla strips, and tomato. Enjoy.
