  • Melt the butter with the oil in a large pot.
  • Add the onions and stir until they are well coated.
  • Cook on low heat for 5-8 minutes, stirring occasionally until they start to soften.
  • Add the thyme.
  • Reduce the heat to very low, cover the pot, and cook for 20-30 minutes, stirring frequently until the onions are very soft and golden yellow.
  • Uncover the pot, raise the heat, add the sugar, and cook for 5-10 minutes until the onions start to brown.
  • Add the sherry vinegar and raise the heat again.
  • Continue cooking until the onions darken a bit. (This may take up to 20 minutes.)
  • In the meantime, bring the chicken (or beef) broth to a boil.
  • Add the flour to the onions and stir constantly for 2 minutes.
  • Gradually add the broth, then the wine and the brandy.
  • Season with salt and pepper.
  • Boil for 15-20 minutes.
  • For the bread, preheat the oven to 180 degrees. Place the bread slices on a baking sheet and bake for 15-20 minutes until golden brown.
  • Spread half of the garlic, brush with mustard, and sprinkle the bread slices with Gruyere cheese.
  • Place the soup in oven-proof deep plates and place the bread on top. Put it in the oven on high broil until the cheese melts and starts to bubble.
  • Serve immediately.
