  • 4 red beefsteak tomatoes, ripe, in quarters
  • 1 clove garlic
  • 1/2 cups cucumber, without skin, in thick slices
  • 1/2 cups green bell pepper, in medium cubes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sherry vinegar
  • salt
  • 2 slices baguette, from the previous day
  • 1/2 cups water
  • red onion, in small cubes, for garnish
  • tomato, in small cubes, for garnish
  • cucumber, with skin, in small cubes, for garnish
  • olive oil, for garnish

  • Blend the tomatoes, garlic, cucumber, bell pepper, olive oil, sherry vinegar, salt, bread, and water until you get a smooth mixture without large chunks. If necessary, add more water to blend better.
  • Strain the mixture and set aside.
  • Serve the gazpacho in a deep plate and accompany it with red onion, tomato, cucumber, and olive oil.
