  • 1 tablespoon vegetable oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 3 tablespoons celery, finely chopped
  • 3 cups spinach
  • 1/2 cups rice
  • 2 cups water
  • salt and pepper
  • 3 cups vegetable broth
