Letter Soup with Vegetables

  • 3 tomatoes, quartered
  • 1 clove garlic
  • 1/4 onions
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil, or olive
  • 1 1/2 cups alphabet soup
  • pinches salt
  • 4 cups chicken broth
  • 1 cup carrot, diced
  • 1 cup broccoli, diced
  • 1 cup pumpkin, diced
  • lime, for accompaniment

  • Blend the tomatoes, garlic, onion, and chicken broth. Set aside.
  • In a saucepan over medium heat, heat the oil, add the soup and sauté for 5 minutes or until the pasta is lightly golden.
  • Add the tomato sauce, season with salt, and cook on low heat for 10 minutes.
  • Add the chicken broth, carrot, broccoli and cook for 10 minutes.
  • Add the pumpkin and cook for 5 more minutes.
  • Serve the soup in a deep plate and accompany with lemon.
