Nopales Soup with Chicken

  • 1 tablespoon canola oil
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups onion, finely chopped
  • 4 nopales, cut into strips
  • 1 tablespoon epazote, powder
  • 1/2 cups tomato purée
  • 3 cups Knorr® granulated chicken bouillon, dissolved in water

  • 2 cups chicken breast, cooked and shredded
  • 1 cup red beefsteak tomato, seedless, in small cubes
  • 1 pasilla chile, grilled, sliced
  • leaves epazote, washed and disinfected, for garnish

  • Heat a pot over medium heat, add the oil, garlic, and onion. Sauté until golden and add the nopales.
  • Add the epazote and mix. Incorporate the tomato puree and broth, and let it boil for 15 minutes.
  • Adjust the flavor with salt and pepper. Add the chicken and simmer over low heat for 5 more minutes.
  • Serve hot. Accompany with tomato (jitomate), pasilla chili, and garnish with fresh epazote leaves.
