2 cups fidelini pasta, for soup
1 cup tomato purée
3 cups chicken broth
1 tablespoon salt
1 teaspoon ground black pepper
1 tablespoon chipotle chile in adobo sauce, and ground
3 tablespoons fresh cilantro, finely chopped
1/2 cups sour cream
3 tablespoons chipotle chile in adobo sauce, and ground
1/2 cups pork rinds, fried and crushed
1 tablespoon fresh cilantro, finely chopped

Heat the oil in a medium pot over medium heat. Pour in the soup and fry for 5 minutes, stirring constantly.
Add the tomato puree and mix. Immediately incorporate the chicken broth and season with salt and pepper.
Add the chipotle chili, cilantro, and mix. Lower the stove flame to minimum.
Cook for 20 minutes or until all the liquid evaporates and the pasta is cooked.
Pour the soup into a cake mold. Compact the soup a bit and unmold onto a flat dish.
For decoration: mix the cream with the chili perfectly in a small bowl. Drizzle this mixture over the soup cake.
Sprinkle with crushed chicharrón, mixed with cilantro.
