Colorful Soup

The Colorful Soup is a healthy recipe made with pasta, beet cream, butter, poblano chili, and ground garlic. Perfect as a side dish or as a main course. For those days when you don't feel like cooking much and want to eat something really delicious.

  • 1 package penne rigate pasta, La Moderna
  • 2 packages cream cheese
  • 1 beet
  • 2 packages table cream
  • 1/4 cups butter
  • 2 cubes chicken broth
  • 1 pinch salt
  • 1/2 tablespoons ground garlic
  • 1 pinch pepper
  • 6 poblano peppers, for filling

  • Cook the La Moderna pasta. Roast the poblano chiles, peel them, and cut them into squares.
  • Strain the soup and blend the chiles with garlic, pepper, salt, chicken bouillon cubes, and onion. Add the half-and-half and cheese.
  • Cut the beet into thin strips; this will be used to decorate the soup.
  • In a saucepan with butter, add all the blended ingredients, mix for 2 minutes, and add a pinch of salt.
  • In a plate, add the green soup and decorate with cream cheese squares and beet strips.
