This devil's noodle soup is an easy family recipe to prepare. With its spicy and delicious flavor, everyone at home will surely love it. Perfect for family gatherings.
Cut the carrots, celery, and onion into medium pieces. In a pot, heat oil and fry the vegetables. Then, in the same pot, add the chicken wings. Fry the vegetables until they caramelize and the chicken wings until golden on both sides.
Once the above is removed from the oil, place it in a large pot with 1 liter of water and let it cook over low heat for 2 hours or until the chicken and vegetables are fully cooked.
To season the broth, add cilantro, salt, bay leaf, and pepper to taste. Once the 2 hours or sufficient cooking time for both the chicken and vegetables have passed, remove the broth from the heat and separate the consommé from the rest of the vegetables and chicken.
On the side, devein the chiles and remove their seeds. Then place them on a griddle to toast them and release their flavor; it is important to ensure the chiles do not burn, we only want them toasted.
Once all the chiles are toasted, place them in a bowl with 1/2 liter of water for 5 minutes. After this time, blend the chiles with the water they soaked in and the toasted garlic.
Once blended, strain the preparation and place it in a pot over low heat. At this moment, add the previously prepared chicken broth to the chile sauce.
While the mixture of chiles and broth is heating, finely chop all the small mushrooms, ensuring they are small pieces. Then, place the mushrooms in a pan with a little oil and sauté until they change color. Once they turn shiny, add them to the chile broth to finish cooking.
In the same pan where the mushrooms were fried, add a little more oil and sauté the noodle pasta until it changes color from yellow to a shiny brown. Once the pasta is ready, add it to the broth with the chiles, the consommé, and the mushrooms, and let it cook over medium heat for another 10 minutes.
