1 package elbow pasta, La Moderna
1 morita chile, roasted
1 leaf Avocados from México, grilled
1 clove garlic, small
1/4 onions
1 cup beans, ground
100 milliliters sour cream
100 grams masa dough
1 tablespoon lard
2 tablespoons añejo cheese, grated
1 tablespoon epazote, chopped
2 tablespoons butter

We roast the morita chili and the avocado leaf.
We blend the beans with garlic, onion, morita chili, and avocado leaf.
In a pot over the heat with butter, we season the beans with the ingredients for 5 minutes and heat on low.
In another pot, we boil the water, add salt, the pasta, and heat for 5 minutes.
In a bowl, we put the dough, epazote, lard, and grated aged cheese, mix, and form the balls.
We return to the bean sauce, add the dough balls, and let it cook for 5 minutes.
We add the cream and mix.
We coat the elbow pasta and garnish with a little aged cheese.
