Mom's Soup

This soup originated from an idea my mom had the day after a family meal where not all the guests attended, so she had many leftovers that she cooked for my sisters, my dad, and me. I remember asking her for the recipe that day, to which she replied, I will give it to you when it’s important for you to know. Then, just before I got married, I saw it written at the end of a recipe notebook I received as a farewell gift, signed by my mother’s hand: the important moment has arrived, congratulations daughter.

  • 1 chicken breast
  • 1 package spaghetti, La Moderna
  • 250 grams sour cream
  • 1 cup vegetables, boiled
  • 250 grams turkey deli ham, in thick slices
  • 2 sausages, chopped
  • parsley , chopped to taste
  • salt
  • pepper
  • fines herbs
  • avocados, in cubes for garnish

  • Boil the chicken with onion and the chopped vegetables, then let it cool. Reserve the broth for the soup.
  • Separately, cook La Moderna spaghetti. Once it is al dente, let it cool a bit.
  • Chop the ham, sausage, and parsley.
  • Once all the ingredients are ready, add them to the chicken broth (with the pieces or the shredded or cubed breast); incorporate the cream (already tempered to avoid curdling), the ham, the sausage, the parsley, and the La Moderna spaghetti.
  • Let it simmer over medium heat, adjusting the seasoning with salt and fine herbs.
  • Serve with cubes or slices of avocado and fresh parsley for garnish.
