I make this soup because my children, aged 5 and 2, find it difficult to eat dry foods, so they love soups. And looking to nourish them with something quick and tasty is how I came to this snail soup with chicken. I hope you like it.
1 package short pasta, snail N° 1 La Moderna 200 g
1 chicken breast , cut into cubes
2 tomatoes
1 bell pepper
1 clove garlic
1/4 onions, white
2 cubes chicken bullion
1 pinch dried oregano
1 sprig epazote
salt , and pepper to taste

Cut the red tomatoes, sweet pepper, onion, and garlic into 4 parts, blend, and set aside.
Cook the chicken cubes in approximately 3 liters of water. When the chicken first boils with the water, remove the foam that rises to keep a clean broth.
Once the broth is clean, add the 2 cubes of consomme, the oregano, and the mixture you blended of tomatoes, sweet pepper, onion, and garlic. Add salt and pepper to taste.
Let it cook for 35 minutes; after that time, add the snail soup from La Moderna and cook for approximately 10 more minutes, then remove from heat.
