Sopa Ayotl Kuali

A delicious soupy pasta soup that is very Mexican, by the name, which means Very Good Soup in Nahuatl.

  • 1/2 packages fideo pasta, La Moderna

  • Heat oil and fry the noodles. Set aside.
  • Grind the tomatoes, onion, garlic, and 1/4 cup of water.
  • Fry this puree (I like it unstrained) with very little oil; when it changes color, add the rosemary, celery, cilantro, basil, pasta, and salt.
  • Let it boil over high heat, then lower to minimum temperature and cover for 20 minutes.
  • Serve and enjoy.
