Sopa de Fideo en Salsa de Morita

This delicious soup, I learned from my mom, she always cooked it to accompany the main dish and always when I got home from school, I could smell from a distance that characteristic aroma of this soup, although my mom did not serve it with dough balls, it was a delight on its own, the dough balls are my personal touch, which I use to accompany this delicious soup, and everyone loves it and I hope you like it too.

  • 350 grams dough, from nixtamal
  • 200 grams Gouda cheese, or manchego
  • oil , for frying
  • 1/2 chicken breasts, small 300 g
  • 2 cloves garlic
  • 1 onion, small
  • salt , to taste
  • 6 tomatoes, large
  • 2 morita chiles
  • 1 package fideo pasta, N° 2 La Moderna 200 g
  • 5 cups chicken broth , (the leftover from the chicken breast)
  • 2 sprigs fresh cilantro

  • We beat the dough with a little water until it is soft, make balls approximately 3cm to 4cm until finishing all the dough, set aside.
  • Cut the gouda cheese into cubes, approximately 2 cm, and place each cheese cube into the dough balls, one cheese cube per dough ball, mold until the cheese is well covered, do the same with all the dough balls, set aside.
  • Put a pan over high heat and add enough oil for frying, once it is hot, add the dough balls one by one and immediately with a spatula, pour oil over the top of the balls, this is to seal them and prevent the cheese from leaking, lower the heat and let them cook well on both sides, about 5 minutes on each side, after the time is up, remove and let drain and place them on a plate covered with paper towels to absorb the excess fat, set aside.
  • In a pot, we put the chicken breast, add 6 cups of water, one garlic clove, half an onion, and one teaspoon of salt, cover and let cook, when it is ready, strain the chicken (reserve the broth), let it cool so we can shred it and set aside.
  • Put a pot over high heat with water, add the tomatoes along with the chiles, let it boil until everything is soft, drain the water and add it to the blender along with a garlic clove, half an onion, and a cup of chicken broth, blend and set aside.
  • Put a pot over high heat and add a drizzle of oil, let it heat well and add the pasta (fideo N° 2) from La Moderna, lower the heat a bit and stir constantly to prevent burning, once it acquires a golden color, pour in the tomato sauce we had set aside, raise the heat, stir a bit and let it season for one minute, after the minute, add the remaining 4 cups of chicken broth, add salt to taste, stir and cover over medium heat for 8 minutes, after that time lower the heat and add the shredded chicken, stir and cover, let it boil for 2 more minutes and turn off.
  • In a deep plate, serve the hot soup and place 2 dough balls on top, garnish with some sprigs of cilantro and enjoy.
