Three Chile Noodle Soup

In every Mexican household, the traditional noodle soup is a must, and despite the simplicity of its ingredients and preparation, it is highly appreciated for being aromatic and comforting. In my case, I added 3 of my favorite spices.

  • 2 tomatoes
  • 1/4 onions, medium
  • 1/2 cloves garlic
  • 1/2 teaspoons salt
  • 3 tablespoons corn oil
  • 1 package fideo pasta, La Moderna
  • 1 1/2 liters chicken broth
  • güero chiles, to taste
  • chipotle chiles, to taste
  • árbol chiles, to taste

  • Blend the tomatoes, onion, garlic, and salt until you achieve a smooth mixture.
  • Heat the oil in the bottom of a medium saucepan; pour the pasta into the oil and fry it until most of it is golden brown. You will need to stir it continuously to prevent burning.
  • Add the broth and the tomato mixture and let it simmer for 10 minutes.
  • Taste it and adjust the amount of salt if necessary. Serve with the three types of chili as desired.
