Potato and Leek Cream with Smoked Salmon

This delicious potato and leek cream is accompanied by smoked salmon and garnished with chives.

  • 1 kilo potato, cut into cubes
  • 2 leeks, large cut into cubes
  • 4 tablespoons unsalted butter
  • 1 liter chicken broth
  • 100 milliliters whole cream
  • 200 grams smoked salmon, cut into strips
  • 1 bunch chives, chopped for garnish

  • In a pot, melt the butter over medium heat. Add the leek and cook over low heat for 10 minutes or until the leek is soft.
  • Add the potato and mix. Add the chicken broth and cream and increase the heat to medium, cook for 10 minutes or until the cream begins to boil.
  • Cover the pot and let the soup cook for 15 minutes or until the potato is well cooked.
  • Add 2/3 of the salmon and mix. Season with salt and pepper.
