1 kilo potato, cut into cubes
2 leeks, large cut into cubes
4 tablespoons unsalted butter
1 liter chicken broth
100 milliliters whole cream
200 grams smoked salmon, cut into strips
1 bunch chives, chopped for garnish

In a pot, melt the butter over medium heat. Add the leek and cook over low heat for 10 minutes or until the leek is soft.
Add the potato and mix. Add the chicken broth and cream and increase the heat to medium, cook for 10 minutes or until the cream begins to boil.
Cover the pot and let the soup cook for 15 minutes or until the potato is well cooked.
Add 2/3 of the salmon and mix. Season with salt and pepper.
