  • 1 cup onion, in thin strips
  • 3 tablespoons garlic, finely chopped
  • 2 cups button mushrooms, sliced
  • salt
  • 5 cups chicken broth
  • 2 cups quintonil herb (pigweed), clean
  • 1 tablespoon chipotle chile in adobo sauce
  • salt
  • pepper
  • panela cheese , in cubes, for accompaniment
  • corn tortillas, for accompaniment

  • Heat a drizzle of oil in a pot and sauté the onion and garlic for 3 minutes or until they start to change color. Add the mushrooms and salt and cook for 5 minutes.
  • Incorporate the chicken broth, quelites, and chipotle pepper. Cook for 15 minutes or until all the ingredients are well cooked. Adjust the seasoning and add salt and pepper if necessary.
  • Serve the quelites broth with cheese cubes and accompany with tortillas.
